Kassler, O filete de Sajonia, es un filete de carne porcina puesto en salazón y un poco ahumado. Existen también filetes preparados con codillo de cerdo (Kasseler Kamm). Si la carne procede de la paletilla se denomina Kasseler Blatt. En España se denomina a veces como filete o chuleta de Sajonia. Es muy parecido a la chuleta de cerdo
En contra de lo que puede pensarse, no es una especialidad proveniente de Kassel (Hesse). El origen del nombre está en que el filete se prepara siguiendo la receta de un carnicero berlinés llamado Cassel de finales del siglo XIX.
El filete Kasseler es una parte importante en los platos estofados, muy importante su unión con la col. No obstante, su versatilidad permite que se pueda freír en una sartén, cocer con unas verduras o asar en el horno, todo ello en unos pocos minutos.
