El carpaccio es un plato típico de la cocina italiana elaborado a base de láminas muy finas de carne o pescado crudo, aderezadas con aceite de oliva, sal, zumo de limón y otros condimentos. Suele estar acompañado de lascas de queso parmesano.

Aunque originalmente se preparaba principalmente con carne de buey, los carpaccios se han popularizado enormemente en el mundo culinario y actualmente los podemos encontrar de frutas y verduras también. Podríamos afirmar que, en la gastronomía actual, un carpaccio puede estar constituido por cualquier alimento que se presente crudo o marinado, cortado en láminas finas y acompañado de un aliño.
