Proviene de cerdos de corral, con una dieta a base de pastos naturales y bellotas durante la temporada de montanera, que garantiza una buena infiltración de grasa.
Su corte presenta un atractivo color rojo y un brillo y veteado característico acorde a su alta calidad.
