El salchichón es un tipo de embutido curado de origen griego y romano.

Uno de los rasgos más característicos del salchichón es su color rojo intenso y brillante. Además, su corte es homogéneo, liso y el color está bien ligado, sin presentar ninguna coloración anormal. A simple vista se puede diferenciar perfectamente entre los fragmentos de carne, los de tocino (en pequeños dados de grasa) y la pimienta en grano.

Tiene un sabor delicado y dulce que se contrapone con el picante de las especias, proporcionándole ese aroma y sabor tan característicos.
