La Sumaia es un embutido muy popular en la gastronomía catalana y muy apreciado por sus características.
Sumaia.- En muchos lugares es sinónimo de secallona. Sin embargo, suele ser la más alargada, delgada y delicada, pues la tripa es extremadamente seca, y, por tanto, más frágil. De hecho, su nombre viene precisamente de su propia descripción, ya que “somall” en catalán significa “cosa seca y medio deshidratada”.
El breve tiempo de secado nos permite apreciar su origen: el secado de la butifarra cruda. Es un producto muy tierno, que se funde en la boca, ideal para picoteos, bocatas … Etc.
