Es panza de cerdo curada en salazón y condimentada (frecuentemente con pimienta u otras especies), que se deja secar durante unos tres meses (pero normalmente no se ahúma). Hay muchas variedades. Aquí en España también es muy típica. Está en particular es de la región de Teruel, panceta curada es un producto artesanal, para su elaboración se realiza untando bien toda la panceta con sal gorda, después se deja reposar con la sal durante 2 o 3 días.

Se come cruda o también se puede poner en guisos o cocidos… Etc.
